World Sushi Cup® Japan 2022 took place at Tokyo Metropolitan Central Wholesale Market Toyosu Market on Friday, January 20th and Saturday, January 21st. It celebrated its 10th anniversary with 19 contestants from 12 countries.

The Qualifying tournament (Edo-mae sushi Open Competition) on the 20th was divided into three sessions, Shikomi (preparation), Otsukuri (raw-fish), and Nigiri (hand-pressed) to evaluate each contestant’s basic cooking procedures and techniques. Of the 19 contestants competing on the first day, 15 were chosen to advance to the Final (Creative Sushi Open Competition) on the next day, and they competed for the title of world’s best.

Conditions

  1. In principle, contestants will be selected from among those who have at least five years of sushi cooking experience in Japan or abroad, who are members of the National Sushi Federation, or who have taken the SSI sushi training or examination.
  2. All participants in the competition must attend the “Black Belt Training Session” to be held on Thursday, January 19. The top 15 finishers in the qualifying tournament will be eligible to participate in the final, depending on the number of participants.
  3. On the day of the competition, contestants should be able to prepare for the competition.
  4. Contestants has to be non japanese.
